# How to Make It:

- Warm olive oil in a large heavy-bottomed pot over medium heat. Add onion, carrots, and celery. Cook, stirring frequently, until the vegetables are translucent and softened, approximately 5 to 7 minutes.
- Incorporate minced garlic and sauté for 1 to 2 minutes until fragrant.
- Add ground beef and ground pork, breaking them apart with a wooden spoon. Cook until meat is browned and no longer pink, about 8 to 10 minutes.
- Pour in red wine, scraping any browned bits from the bottom of the pot. Allow the wine to simmer for 3 to 5 minutes until slightly reduced.
- Mix in tomato paste and let cook for 1 to 2 minutes until it develops a deeper color.
- Stir in crushed tomatoes, milk or heavy cream, bay leaves, oregano, thyme, salt, and black pepper. Mix thoroughly.
- Bring the mixture to a gentle simmer. Lower heat, cover, and let cook for 90 to 120 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Discard bay leaves.
- Ladle the sauce over freshly cooked pasta and top with grated Parmesan cheese.
