# How to Make It:
- Preheat the oven to 350°F. Line a 9x9-inch baking pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt until evenly distributed.
- In a large bowl, beat the softened butter, light cream cheese, and sugar until the mixture is light and fluffy.
- Add the egg, Greek yogurt, and vanilla extract to the creamed mixture and beat until smooth and homogenous.
- Gradually fold the dry ingredients into the wet mixture, stirring just until combined to avoid overmixing.
- Spread the batter evenly in the prepared pan and bake for 13 to 15 minutes until edges are lightly golden and a toothpick inserted in the center comes out clean.
- Allow the cookie base to cool completely, then crumble it finely into a large bowl.
- Add an additional 2 tablespoons of Greek yogurt to the crumbs and mix until the mixture holds together when pressed; add more yogurt one teaspoon at a time if necessary.
- Roll the mixture into 1-inch diameter balls and place them on a parchment-lined baking sheet. Chill in the freezer for 20 to 30 minutes until firm.
- Melt the white chocolate or candy melts with optional coconut oil in a microwave-safe bowl at 30-second intervals, stirring until smooth.
- Dip the tip of each cake pop stick into the melted chocolate and insert it halfway into each chilled cake ball.
- Dip each cake pop into the melted chocolate, gently tap off excess, and immediately apply sprinkles if desired.
- Stand the cake pops upright in a styrofoam block or cake pop stand and allow the coating to set at room temperature or refrigerate until firm.
