# How to Make It:

01 - Combine buttermilk and hot sauce in a large bowl. Add chicken pieces, ensuring full coating. Cover and refrigerate for at least 2 hours, preferably overnight.
02 - Preheat oven to 425°F (220°C). Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl. Cut in cold butter with a pastry cutter or fingers until mixture resembles coarse crumbs. Add cold buttermilk and mix until just combined.
03 - Turn dough onto floured surface and gently pat to 1-inch thickness. Fold dough in half and pat down; repeat 3–4 times. Cut biscuits with a 2.5-inch cutter. Place on parchment-lined baking sheet, brush tops with buttermilk, and bake 12–15 minutes until golden brown.
04 - In a shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
05 - Heat vegetable oil to 350°F (175°C) to a depth of 2 inches in a heavy skillet. Remove chicken from marinade, allowing excess to drip off. Dredge pieces in seasoned flour, pressing to adhere.
