# How to Make It:
01 - Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat. Add diced potatoes and cook, stirring occasionally, for 10 to 12 minutes until golden and beginning to soften.
02 - Add finely chopped onion and diced bell pepper, if using. Continue to cook for 5 minutes until vegetables soften and lightly caramelize.
03 - Incorporate sliced hot dogs or sausages and cook for 3 to 4 minutes until lightly browned.
04 - Sprinkle smoked paprika, salt, and black pepper evenly over the skillet contents. Stir to combine thoroughly.
05 - Create four small wells in the hash mixture. If the pan is dry, add the remaining tablespoon of oil. Crack one egg into each well.
06 - Cover the skillet and cook for 5 to 7 minutes or until egg whites set and yolks reach preferred doneness.
