# How to Make It:
01 - Heat olive oil in a large skillet or Dutch oven over medium heat. Add sausage slices and cook for 5 to 7 minutes, turning occasionally, until browned. Remove sausage with a slotted spoon and set aside.
02 - In the same pan, add diced onion, sliced carrots, and celery. Cook for 5 minutes until vegetables soften slightly.
03 - Add minced garlic and cook for 1 minute until fragrant.
04 - Stir in chopped apples and return the browned sausage to the pan.
05 - Pour in broth, Dijon mustard, apple cider vinegar, dried thyme, salt, and black pepper. Stir thoroughly to combine all ingredients.
06 - Bring the mixture to a gentle simmer. Cover and cook for 20 minutes, stirring occasionally, until vegetables are tender and flavors meld.
