Pin It Soft, golden pretzel twists studded with crispy bacon and tangy pickles, finished with a touch of heat. These Spicy Pickle Bacon Pretzel Twists are perfect for snacking or sharing at parties.
I first made these for a movie night with friends, and they were a hit from the very first batch. The combination of smoky bacon and zesty pickles with a touch of spice really stood out and became an instant favorite in our house.
Ingredients
- Pretzel Dough: 3 1/4 cups (410 g) all-purpose flour, 1 packet (7 g) instant yeast, 1 tablespoon granulated sugar, 1 teaspoon salt, 1 cup (240 ml) warm water (about 110°F/43°C), 2 tablespoons unsalted butter, melted
- Filling: 8 slices bacon, cooked crisp and chopped, 3/4 cup (90 g) dill pickles, finely chopped, 1,2 jalapeños, deseeded and finely diced (adjust for preferred heat), 1/2 teaspoon crushed red pepper flakes
- Pretzel Bath: 8 cups (2 liters) water, 1/3 cup (80 g) baking soda
- Topping: 1 egg, beaten (for egg wash), Coarse salt, for sprinkling
Instructions
- Activate Yeast:
- In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Make Dough:
- Add melted butter, salt, and flour. Mix until a soft dough forms. Knead on a floured surface for 5,7 minutes, until smooth and elastic.
- Rise:
- Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- Prepare Oven & Sheets:
- Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
- Shape Pretzels:
- On a lightly floured surface, divide the dough into 12 equal pieces. Roll each piece into a 12-inch rope.
- Add Filling & Twist:
- Flatten each rope slightly and sprinkle evenly with chopped bacon, pickles, jalapeños, and red pepper flakes. Fold the dough over the filling and pinch to seal, then gently twist each rope.
- Baking Soda Bath:
- In a large pot, bring 8 cups water and baking soda to a boil. Reduce heat to a simmer.
- Dip Twists:
- Working in batches, dip each twist into the baking soda bath for 30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
- Egg Wash & Topping:
- Brush each twist with egg wash and sprinkle with coarse salt.
- Bake:
- Bake for 15,18 minutes, or until deep golden brown. Cool slightly before serving.

- → How do I prevent the pretzel twists from unravelling?
Pinch the dough well after folding in the filling, and twist gently to keep them sealed during baking.
- → Can I make these ahead of time?
Yes, bake the pretzel twists in advance and store in an airtight container. Reheat briefly to serve warm.
- → What dipping sauces pair well?
Spicy mustard, ranch, or creamy cheese dips all complement the flavors and add extra zing.
- → Is it possible to substitute turkey bacon?
Absolutely! Use cooked, chopped turkey bacon for a lighter option without sacrificing flavor.
