I first made Pickle-in-a-Blanket for a summer picnic & everyone loved the playful combination of creamy, tangy flavors wrapped up in a soft tortilla. It's become my go-to snack for impromptu get-togethers.

Ingredients

  • Flour tortillas: 4 large (8-inch)
  • Dill pickles: 4 large, whole
  • Cheddar cheese: 4 slices (or Swiss)
  • Cream cheese: 4 oz (115 g), softened
  • Fresh dill (optional): 2 tbsp, chopped
  • Red onion (optional): 1 tbsp, finely diced
  • Yellow mustard (optional): 1 tbsp

Prep tortillas:
Lay out the tortillas on a clean surface.
Spread cream cheese:
Spread 1 oz (about 2 tbsp) of softened cream cheese evenly over each tortilla.
Add cheddar cheese:
Place a slice of cheddar cheese in the center of each tortilla.
Optional extras:
If using, sprinkle chopped dill and red onion over the cheese, and drizzle with mustard.
Add pickle:
Place one whole dill pickle at the edge of each tortilla.
Roll up:
